Each Golden Egg sells for 100 coins, which is tempting early when money is tight. Do not sell your entire stack, though, because one Golden Egg is needed for a hidden recipe at the Mysterious Well.
Does the Chicken King respawn?
The Chicken King spawns only once per game. After you kill it, the boss will not return no matter how many more chickens you kill. Regular chickens keep spawning as normal, so you can still farm them for food and materials.

The Golden Eggs feed into the Mysterious Well, which you open by dropping 666 gold into it near the padlocked purple portal in the spooky forest. Inside sits Priscilla’s sacrifice bowl and four rituals, one of which needs a Golden Egg.
The Demonic Chicken ritual consumes 2 Grilled Chicken Legs and 1 Golden Egg, and it turns some chickens into black birds that keep producing Golden Eggs in the world. That makes the single egg you set aside worth far more than 100 coins.
If you already sold every Golden Egg, you are not locked out. The bowl has a repeatable recipe that hands you a fresh Golden Egg.

So the practical routine is simple. Kill chickens as you play until the boss appears, drop it in a couple of hits, then hold onto at least one Golden Egg for the well. Sell the rest only after you know you no longer need them.
