Weird Coral and Coral Chunks are two of the harder resources to pin down in Sand: Raiders of Sophie, and the game never spells out where either one comes from. Both feed into the three Tech Trees that unlock upgrades for your Trampler, so you will eventually need a steady supply of each. They come from completely different places, though, which means two separate farming habits.
Quick answer: Weird Coral only drops from killing the infected, zombie-like Upiors found around coral-covered landmarks. Coral Chunks only come from Valuables Safes, the black-and-gold boxes inside named points of interest. Neither can be bought, and you must extract successfully to keep them.

How Weird Coral and Coral Chunks differ
The fastest way to avoid wasted runs is to remember that these two materials never overlap in how they spawn. One is a combat drop, the other is loot from a container. Here is the split at a glance.

Weird Coral is strictly an enemy drop. Killing Upiors, the coral-infected enemies that wander the map, is the only reliable way to build a stockpile. It is not a guaranteed drop, so you can wipe out a whole pack and walk away empty-handed. Volume is what makes it work, which is why crowded spawn points matter.
Head for named points of interest first. These often hold a dozen or more Upiors, giving you the most kills per visit. Look for places ringed by pink or purple coral formations, such as shipwrecks, island towns, and other major landmarks. When an Upior dies, check the exact spot where it fell and watch for the purple-colored coral on the ground.
The desert also has purple, circular coral colonies that carry a small chance of holding Weird Coral. While riding the Trampler, scan for ship wrecks with these colonies around them, since Upiors usually guard the same spots. The colony route is slow on its own and often yields only a couple of pieces, so treat it as a bonus while you clear enemies rather than your main plan.
Note: Weird Coral never appears in lootable crates or containers, and no vendor sells it. If you need it for a Tech Tree node, plan on combat-heavy runs through infected zones.

Do not skip the boats in coral zones. They are commonly ignored, lightly defended, and you can pull Weird Coral from corpses there while also finding safes nearby. Sweeping a remote wreck before you leave is one of the easiest ways to pad a run.
Where to farm Coral Chunks
Coral Chunks only come from Valuables Safes, the large black-and-gold box-style safes found at named points of interest. Despite the name, these safes are everywhere, and each one averages roughly 10 to 20 Coral Chunks. That makes a single good run far more productive than grinding for Weird Coral.
Coastal cities and Upior-guarded shipwrecks are the strongest spots for stacking multiple safes. Cities are usually the main loot hubs, but expect to deal with an Ironclad and several zombies in the streets. The Ironclads look threatening yet fall fast, going down after around five or six 80mm cannon rounds.
Intact shipwrecks are the other reliable source. Look for boats with large red doors on the deck, then blow them open with Time Bombs or a Trampler cannon round. The cargo hold inside often holds a pile of loot, frequently including several safes. Wrecks guarded by Upiors are doubly worth it, since you can grab Weird Coral from the corpses and Valuables Safes from the wreckage in one stop.

Extract or lose everything
This is a PvPvE extraction shooter, so collecting the materials is only half the job. Picking up Weird Coral and Coral Chunks means nothing if you die before reaching an exit, because everything from that run is lost. Other players can contest the same coral-covered landmarks, so move with a plan and head for extraction once your bag is full enough to justify the risk. Clear your targets, sweep the boats, and get out before pushing for one more fight.
