The café in Deltarune Chapter 5 is where the flowers and the Fun Gang sit down between fights to swap short, often very silly conversations. Each chat is its own Flower Team Time interaction, and spending 20 Flowery Dollars plays it out. The catch is that most pairings only appear once you have beaten the matching flowers in their boss battles, so the full list fills in as you push through the chapter.
Quick answer: The café opens right after the Blue and Yellow boss fight. A handful of interactions are available immediately, and the rest unlock as you defeat each flower; return to the café just before the Flowery final fight to view them all. The last two require beating the secret boss, Pink.

Note: The Aqua & Kris talk has branching choices. You first pick a doctor’s or nurse’s outfit, then an Aqua or Yellow outfit, and finally a magic trick (Heal Prayer or Rude Buster) to close it out.
How to unlock more Café Break interactions
The café itself becomes available shortly after you clear the Blue and Yellow boss battle. From there, interactions are tied to progress. As you win over each of the flowers and beat them in their boss fights, the matching pairings start showing up at the café tables.
The final two interactions, the Pink pairings, only unlock after you beat the Chapter 5 secret boss, Pink. Reaching that fight involves gathering all the Pink Coins and obtaining the Mystery Key, and Pink is a tougher encounter than Flowery.
How to know you’ve seen them all
You’ll know the full set is open once every flower has been beaten and the café shows each pairing as a selectable conversation. If a pairing isn’t appearing yet, the most likely reason is that you haven’t beaten the flower it involves, or, for the two Pink interactions, that you haven’t cleared the secret boss. Defeat the relevant boss, return to the café, and the missing chat will be ready to play.
