1. Know exactly what Coffee restores
Sanity is your health bar. It sits in the corner of the screen and falls whenever something bad happens, including jumpscares, an enemy grabbing you, looking at the wrong thing, or stepping somewhere you should not. When it hits zero, you die, and your run ends.
Coffee is the main item that puts Sanity back. Each sip from the coffee machine returns 5 Sanity, and you get up to three sips before the supply runs out. That is a fixed 15 Sanity ceiling per refill, so treat it as an emergency reserve and not an endless tap.

Treating patients also restores Sanity, with the amount depending on your class, so working steadily through your patient list keeps the meter topped up between sips. The more consistently you clear rooms, the less you have to interrupt your work for the machine.

To remove a Wall Banger cleanly, approach it with Coffee or other food and interact. If you try to wave it off with nothing in hand by holding E, it leaves but drains a large chunk of Sanity, so always carry something to hand over instead.

5. Pick the right counter for each enemy
Coffee is the wrong answer to most monsters, and using the wrong item usually costs more Sanity than the threat itself. Match the response to the enemy so you are not wasting your limited sips on something Coffee cannot fix.

When you start banking Animal Coins, put survival consistency ahead of novelty. Coffee is the first purchase worth making, and one stack per player is enough to carry the earliest shifts. It directly protects your Sanity, which is the number that ends runs.
After your Coffee supply is covered, save toward a healing class, such as Doctor or Surgeon instead of stockpiling consumables you will forget to use. Camera upgrades and weapons solve problems you will not face on the early nights, so they can wait.
Build these Coffee habits while the early shifts are still forgiving, and they will carry you into the harder nights, where a missed sip or a blocked desk is far less easy to recover from.
