Fields of Mistria gives you 12 people to court, marry, and eventually raise a family with. The roster started at 10 at launch, and two more candidates joined the pool after the 1.0 update. Each one lives somewhere specific in town, holds a job, and has a short list of loved gifts that push your heart level up faster than anything else.
Quick answer: Talk to your chosen candidate every day and hand them a loved or liked gift. Every two hearts you gain unlocks a heart event, delivered by a letter in your mailbox or posted on the request board.

How romance works in Fields of Mistria
Hearts measure how close you are to a villager. Only marriage candidates have hearts that matter for romance, and the jewel-shaped heart next to their name changes color every two hearts so you can track progress at a glance.
Two actions raise hearts: chatting with the character once a day and giving them gifts. Flowers and food that they like are the easiest daily picks, since finding a loved gift every single day is impractical. Save a loved gift for their birthday, which gives a much bigger friendship boost.
You can pursue more than one candidate at the same time, so there’s no penalty for getting to know several people before you commit. When a heart event is ready, a letter arrives with directions on where to meet. Letters carrying a heart icon are the romance ones, and some come from friends or family of the candidate rather than the candidate themselves, so read your mail carefully.
