Harvest Melon is a Divine crop added to Grow a Garden in the third part of the Harvest Moon Event, and it is not something you can buy from a shop or pull from a seed pack. The seed exists only inside the Moon Crafting system, so the path to owning one runs entirely through event progress.

Harvest Melon unlock requirement and crafting recipe

The gate is the summon counter. Harvest Melon does not appear as a craftable option at the Moon Crafting Station until you have summoned Harvest Moon 16 times, so no amount of stockpiled ingredients will let you skip ahead. Once that count is reached, the recipe becomes selectable and you can commit the materials.

Crafting time and the single-slot Moon Crafting limit

Once the recipe is started, the Harvest Melon Seed takes 2 hours to finish. Robux can be spent to skip that wait if you would rather have the seed in the ground immediately.

The bigger constraint is that Moon Crafting only processes one item at a time. Every other Harvest Moon reward you want has to queue behind whatever is currently cooking, so a 2-hour Harvest Melon craft is 2 hours you are not spending on anything else. If you are chasing several event items, decide the order before you start rather than after.

Note: the ingredients are consumed when the craft begins, not when it completes. Cancelling mid-craft is not a way to get your Watermelon, Fennel, and Crimson Thorn seeds back.
