Quick answer: Weakened stone walls need the Tiger Cannon, your reward for beating Lei Dang in the Mirage Estate. It works even when not equipped. One Crimson Manor wall opens with a Powderkeg instead.

Stone walls: Tiger Cannon

Head to the Mirage Estate. Lei Dang, the Tiger Cannon, is roughly 66 m away from the Perfect Vessel Pond bell and 11 m higher.
Defeat Lei Dang. The Tiger Cannon is the reward for the fight.

Continue along the story objective until it leads you to a weakened wall. The objective reads: “Continue until you find a wall you can blast open”.
Blast the wall open. The objective then changes to “Blast through the wall with the Tiger Cannon”, and the stone shatters to clear the path.

Until you beat him, weakened stone walls stay closed.

The wall under the Valley Sha-Chi Tower

The Crimson Manor quest has its own broken wall, beneath the Valley Sha-Chi Tower. You open that one with a Powderkeg.
