The objective “Investigate Ambrus’s soldier outposts to learn more” belongs to the Ambrus’s Dungeons questline in The Blood of Dawnwalker, and it does not clear just because you walked into a camp. The trigger is a written order carried by one of the soldiers stationed there.
Quick answer: Open the gate into the fortified outpost, kill every soldier in the courtyard, then loot the body holding Orders from Ambrus and read the document. The objective ticks off the moment the letter is read.
Getting into the outpost
The outposts are enclosed by a wooden palisade with a hinged gate. Coen counts as a trespasser the second he steps inside, so the guards turn hostile without any dialogue or warning. There is no stealth requirement attached to the objective.

Note: at draining camps the equivalent letter is called Directives from Ambrus. It spells out how the soldiers are supposed to bleed their victims and warns them to stop diluting the blood barrels to pad out the shipment count.

Open the journal and check the Ambrus’s Dungeons entry. “Investigate Ambrus’s soldier outposts to learn more” will be struck through as completed, and the quest will point you at whatever comes next. If it is still active, the two usual causes are a soldier still alive somewhere in the camp, or the orders sitting in your inventory unread.
The Briar Sloughs camp and what else is inside it
The richest of these sites sits in Briar Sloughs, just north of the Borescu Commons Shrine, and is tied to Ambrus’s Dungeons: Evil and Convenience. It can be tackled at any hour, though mornings are the easier window because you can compel a soul there without leaning on developed Vampirism skills.
After the guards are down, Focus Mode lights up the interactive objects. These are the pieces worth handling:

Follow the blood trail northwest to the torture chamber and the dead guard inside it. With the Torn Banner and Instrument of Torture in hand, compel his soul for his account of what happened at the camp. It changes nothing mechanically, but it fills in the gaps the letters leave open.
The shed to the south holds a key on a table and a second letter, this one from an angry Ambrus complaining that blood barrels are missing from his shipments. Take the key, follow the footprints to the cabin, and unlock it to reach the Chief Jailor. Killing him lets you loot the Treasure Map: Hidden Stash from his body; sparing him means he hands it over and walks off. The ledger on the table confirms his men have been redirecting blood to Bakir, and the marked stash itself sits northwest of the camp beside a fallen tree, holding an amulet, coin and a letter from Bakir.
Where Ambrus’s Dungeons sits in the questline
Ambrus’s Dungeons is one category of Court Activity under Ambrus, and it splits into three separate jobs.

Ambrus holds 14 Court Activity locations out of 41 across all three vassals, and each one you dismantle pushes his Anger meter higher. Getting that meter to roughly three quarters full, around 10 or 11 of his activities, opens The Gilded Gauntlet duel. Each Draining Dungeon costs 3 Time Segments, so budget the day accordingly before you ride out.
Hitting outposts is the fastest, most repeatable way to raise Coen’s Infamy in the early hours after the prologue, and every letter you pull off a body feeds the same picture — Ambrus’s operation is leaking blood, and his own soldiers are the ones doing it.
