Gammeltrolls are the giant, rock-covered trolls that roam the Deep North biome in Valheim 1.0. They are not bosses, but each one hits hard enough to end a run in a couple of blows, and their loot is locked behind a petrification mechanic that a normal pickaxe cannot touch. Killing one is only half the job. The other half is turning its frozen carcass into Petrified Tissue.
Quick answer: Bring Lingering Stamina Mead, then kill the Gammeltroll with a Nord Sword and shield up close or a Nord Crossbow with Charred Bolts at range. Once it turns to stone, throw Ember Charges at both of its legs to shatter the body and drop Petrified Tissue.

Where Gammeltrolls spawn and how they attack
Gammeltrolls appear at random spots across the Deep North. There are no fixed spawn points, so you find them by exploring the frozen forests and abandoned villages rather than heading to a marked location.
Unlike the trolls in the Black Forest, a Gammeltroll leans heavily on area attacks. From a distance it hurls logs that cover a wide zone and can nearly one-shot you on impact. Close up, it switches to a heavy stomp and a wide swiping slap. Every one of these attacks can be dodged or blocked, but both options drain a large amount of stamina, which is why stamina management decides the fight.

How to mine a petrified Gammeltroll for Petrified Tissue
A petrified Gammeltroll cannot be mined with a pickaxe. The only way to break it apart is with Ember Charges, the new throwable explosives.
Note: If you would rather keep it intact, a petrified Gammeltroll can be left standing as a large base decoration instead of being blown apart.

How to craft Ember Charges
Ember Charges are made at a workbench from Seal Pelts and Embers. A single batch of ten charges costs 2 Seal Pelts and 1 Ember, so a modest stock of materials produces plenty for several Gammeltrolls.

Petrified Tissue is the raw material for Bloodgold, the ingot behind the Deep North’s higher-tier Nord weapons and armor. Take the Petrified Tissue to a Blast Furnace, add it together with Coal, and wait about 30 seconds. The furnace outputs Bloodgold, which then feeds into recipes such as the Frostfire Greataxe at the Galdr Table. That makes each Gammeltroll a key step in unlocking the biome’s endgame gear.
