Enshrouded lets you load any world as a one-person game through its Session Mode screen. The option you want is the Offline card, the solo option with multiplayer settings shown as not applicable. Everything happens through the menus.

Quick answer: Open a save with Start…, then on the Session Mode screen select the Offline card and press Start. It sets Max. Player Amount to 1 for solo play.

Start a solo Enshrouded world

From the main menu, choose Play to open PLAY SELECTION. It shows three tiles: “Start a Session” (“My savegames & subscribed worlds. Configurable session visibility”), “Join” (“Sessions hosted by other players or dedicated servers”) and “Explore Adventure Sharing” (“See what other players built”). Pick Start a Session and confirm with Space.
Use Q and E to move among SAVEGAMES:LOCAL, SAVEGAMES:STEAM and SUBSCRIPTIONS on the START A SESSION screen. Under each savegame tab are 10 numbered slots. Unused slots display “Empty Slot” and a Create button; select one and create a world if you don’t already have one.

Occupied slots provide a preview and show Last played, Flame Level, Active Altars and Difficulty. For a newly created world, these values start at Flame Level 1, Active Altars 0 and Difficulty Default. Choose the world you want, then press Space on Start…. You can also use Edit (F) for the slot.

A toggle at the top of the screen, “Always ask” (R), controls whether Session Mode appears every time you open a world. Leave it on if you want to pick a mode on each launch.

Session Mode cards compared

Three cards sit on the Session Mode screen. Offline is the solo option, where the dashes mean each multiplayer setting does not apply. Friends Only (“Visible to friends”) and Public (“Visible to everyone”) open the world to other players with six seats.
